We get asked a lot about what is the difference between Ice cream, Gelato and Sorbetto. Well, Here you go. Probably more than you wanted to know!! American ice cream and Italian gelato differ primarily in their ingredients, texture, and serving temperature. American ice cream typically features a higher cream content and often incorporates egg yolks, resulting in a richer and creamier texture with a higher fat content. In contrast, gelato leans towards a higher proportion of milk, lower fat content, and typically excludes egg yolks, leading to a lighter and smoother consistency. The churning process varies as well, with American ice cream incorporating more air during freezing, creating a fluffier texture, while gelato is churned at a slower speed, resulting in a denser and silkier feel. Sorbetto (sorbets) are dairy free,vegan and have the lowest fat content. Sorbettos get their rich and creamy flavor from balancing fresh fruit, sugar and water.
